It just so happens that I am writing this post the day before Pancake day (the best day of the year!) but actually these kind of pancakes are better suited to the weekend when you want a yummy breakfast but still want to keep it healthy. They basically taste like banana pancakes but a little bit more wholesome, and you’re not left with that sicky feeling that you can get after demolishing a stack of floury pancakes. You can have them with fruit or maple syrup but personally I have these on their own or with natural yoghurt to keep the sugar levels down. They are low gi which means that the sugar content is pretty low and won’t cause that spike in your blood sugars. Enjoy!
1/2 cup of Oats
2 peeled Bananas
1/2 tsp of Baking Powder
Pinch of Salt
Syrup or Fruit to go on the side
- Put the oats, bananas, eggs, salt and baking powder in a blender or in a jug and use a hand blender instead, and blitz them to make a smooth but thick batter.
- Leave for 10 minutes to thicken.
- Cook in a non-stick frying pan like normal pancakes and voila!
